Belinda Almaguer created Taco San Luis in honor of her parents birth place, San Luis Potosí, Mexico. She wanted to open a food truck that offered more than just Tacos & Burritos, she wanted to start something that was inspired by the food from San Luis and bring it to this small town of Summerfield.
